These large ceramic vessels, known as botijas , fill the room in tightly packed rows. They were traditionally used to ferment, store, and transport pisco, the grape brandy closely linked to Peru’s coastal valleys. At Bodega Lazo they recall centuries of Ica’s winemaking and trading activity. Their rounded bases and narrow necks helped preserve the liquid and allowed efficient stacking on ships during colonial commerce.
